    I noticed in Brad's post the foiled water pan was on the top shelf with the top grate. I've been placing my pan at the bottom shelf even when cooking with only the top grate. Is there a difference? Does it matter?

    Pat, seems like I vaguely remember seeing Ole Diz when I was a kid. Don't see it here in Georgia now. This Fred's charcoal at $3.49/9lb($7.00/18lbs) is kinda cheap. They have two full pallets sitting at the front door, which says they are trying to move it. I think I'll try a bag.

    Fred's is a discount store in our area. Saw pallets of charcoal stacked outside today, $3.49 for 9 pounds. Label just said "Made in USA." Anyone know anything about the quality?

    Cooked two slabs St.Louis ribs this afternoon at 265-275. Foiled for 75min at 3 hours. Total cook time was 4.5 hours. They came out just fine.     Have you tried the Weber starter cubes? One cube will start the briqs quite well. No paper, oil, or mess to clean up.

    I did a search a few days ago for a stainless steel rib rack. This is the cheapest one I could find.http://www.drillspot.com/products/420169/Progressive_Global_Enterpr_16294_GZ_Stainless_Steel_Rib_Rack Much less than the Williams-Sonoma, but I don't know about quality difference.

    I really like the Weber starter cubes. My local Ace hardware has them. So easy. But it's good to know about these other methods that work well too. Those cubes may not be available forever.
