Yellow Fin Tuna

A guy at work has his own boat and did really well fishing and hooked me up with some of his catch, yellow fin tuna.

Marinaded the steaks in Soy Vay Hoisin Garlic sauce for about 12 hours

For some this would be cooked enough, I like and can eat sushi but I can't eat raw fish if I am the one preparing it, my brain just won't allow it so here is the tuna finishing up indirect


Plated with some white rice with some more hoisin sauce added.
 
Looks delicious, John. I'm with you on raw fish. I had some tuna at a great restaurant while on vacation last month. I know that tuna is typically served very rare, but when I got my dinner the tuna was raw. I ate it as I paid a hefty price for it and didn't want to send it back,but really didn't enjoy it. Lesson learned.
 
Raw fish is probably best left up to the pros :) I've had probably questionable sushi @ Christmas & New Years parties, but other than that I've always been ok with what the pros were serving. I bet yours would've been OK raw for 2 reasons - if you trusted the source, and then the surface was cured in the marinade.. (bacteria only on the surface..ya know ?) ....I had sushi last weekend :) loved it

I'm really a "farmer" when it comes to raw fish. I can do without that. However, I WOULD definitely give YOUR yellow fin tuna a go!

I mostly do wild salmon and cod on the grill (mostly with a plank) but I am willing to break new ground. We live a LONG way from Tuna country but it is amazing what we can find in stores in this area. I'll bet I find some. If so, I'll try it and run a post...

Picture perfect tuna John! I'm with you I can eat Sushi at a restaurant, but when it comes to tuna my brain won't let me do it rare either! ;)
