WSM manual / foiling the pan


 
...I just called the service department and they said this refers to the "water bowl"! I asked her 3 times are you sure - she said yup - the water bowl/pan...

I remember a post from Mike Durso who was an engineer that helped in the design on the newer WSM's. He said something like Weber ran all there tests on just water in the bowl no foil.
So it seems they are just towing the company line.

Nothing wrong with that, but I think we all know better.

On their own online schematic, Weber calls it a water pan.

Call it whatever you like...water pan, water bowl, water thingie, water whatchamacallit, etc.

It seems that this water "pan" has spawned more emails on this board than just about any other topic less maybe "beer can chicken"

I foiled my 22.5 waterpan yesterday with 2 sheets of foil, the wide aluminum foil won't cover it in one sheet. I suspect water was boiling up behind the alum foil and was leaking over the sides of the water pan onto the charcoal. It also left quite a burned mess on the bottom of my water pan. I was previously very careful to crimp the foil tight against the pan

It's not worth the trouble to foil the bottom of the water pan. Hey, it's like the rest of the smoker. It's gonna get some smoke and grime on it. If using water in the pan, just spray some Pam in it before filling for easier clean up.
