Amazing as always, Kemper. I'm a brisket novice...in your opinion, how does this cook compare in flavor to traditional low and slow??Havent used the WSM in quite a while. Cooked a 15 lb Choice Grade-Hot &Fast -No Water Pan- about 4 1/2 hrs. Used Hickory
