My wife took the boys out of town so I was on my own for dinner. So for not much more than the price of fast food, I cooked.

ABT virginity. No bacon....I know. Cream cheese, shredded mexican, grill mates bbq seasoning and some diced ham.

Thanks for looking! It was a good cook, and I am most excited to do red potatoes like that again. Thanks to the suggestions of people here I got nice crispy brown outside/skin with fluffy inside.

Question:

I didn't get the sear I like on a steak and had to leave the steak on little longer than I'd like to get feel. Got kettle to about 400 with a fresh basket of charcoal after peppers and potatoes came off. Everything wide open. It wasn't climbing anymore so I ran with it. Is this why people have cast iron grill grates for searing?
