Pichey, I finally found some at Country Meat Market, in Fort Worth. That's a drive for you though. Haven't cooked them yet. They look just like Lampe's though. Kroger says they have them but when he showed them to me all they were was thin sliced pork chops? He then said in 20 years of butchering that's all he's known? LOLI've caved to the pressure and ordered some Wickers. After ordering, I realized that I don't recall seeing any pork steaks down here in Dallas. Is this a common thing that can be found in most places or do I need to go bribe the local butcher?
Or just buy a whole butt, and bone it out yourself.
Let a thin bladed knife be your guide around the bone.
Then slice into steaks, hunks, or country style ribs, it's all good!
