Weekend smokes, Bacon, Meatloaf

Yesterday I smoked up 8.5# cured pork belly. Used some hickory and wild cherry wood.

That little piece on the right is from last batch. Reheated/smoked and cut up into lardons for a stir fry with summer squash, bacon, Thai basil. Pretty tasty stuff.

I did some bird watching today up on Wildcat Ridge in Hibernia, NJ to see the migrating raptors -- about 100 broadwing hawks, a mature and immature bald eagle, sharp-shins, as well as a few songbirds, including a black throated green warbler. Got home in time to get the meatloaf going. Used 2.5 # of meatloaf mix (pork, veal, beef) and got her going with Royal Oak, no wood. Four sweeties and a banana joined in.

Glazed a couple times with ketchup, mango/jalapeno jelly, sriracha, ground cumin. Hehe. Good stuff. Pulled the loaf off at 160F internal.

Mashed sweet potatoes and banana with brown sugar, butter, milk, cinnamon, nutmeg, s&p back on to warm up.

Home grown green beans with sauteed garlic, onion, rosemary.

It's all good stuff, Gary! I gotta try that meatloaf ...like the sound of the glaze.
