What time did you say? :D All kidding aside I think Big Z will be pressed into service today (despite arctic temps) for a very nice bone in thick cut porterhouse. Wife and I need a little "quiet" time. Between Thanksgiving (and all the requisite work) plus the close to 3 hours of driving Thursday, then 3 kids Friday and Saturday with 2 toddlers who's springs were wound WAY too tight for these "old folks" we need to chillax.
Last night I made an outstanding batch of spaghetti Aglio e Olio after daughter got the monsters and oh man did that EVER hit the spot. Sometimes the simplest thing you can make is the best.
 
Larry, we have one daughter but no rug rats yet🤔
Can say we will deal with that life's event if and when it ever happens, lookin' doubtful 🤔
 
Doing a gorgeous porterhouse on BigZ tonight. First part of 2 step is done. It's waiting in a warm oven. While BZ comes up to temp for getting a little "crust". I do stand by my criticism of it BTW. It cannot burn pellets fast enough for it's giant interior in cold weather to really heat up quickly or well. That part of it I am disappointed in.
 
So, as usual Big Z kinda let me down. Even though I had most of the vents plugged up to try and limit cold infiltration and heat escape. But it struggled badly to make it to 345, then could not recover once the steak went in and only managed 315.
So, I used one of my big Lodge CI pans and finished it off. Actually came out way better than I expected it to

Thanks, so darn cold out there the cover actually sounds "crispy" when I put it back on. If the cover wasn't so huge I'd drag it in the house to warm up. Also the getting dark so early is depressing.
 
Many times more than the actual temps it's the wind as well. Especially the wind as of late. Seems lately the last 2-3 years it just can't be "cold" we've gotta deal with gale force winds as well. Of course out here it gets much worse because so many open farm fields. (not complaining about the farms). Just this wind. Ugh!
 
I see a small concern after moving the grill into my lean2, it's heavy as hell and I don't think I like having all 4 wheels rotating 180 degrees 🤔
 
Those are the ones that are normally the fixed wheels. Honestly, I cannot see a benefit of one over the other in general. Maybe if in your specific case, it is easier to have one side fixed due to where/how you store it???? Otherwise, I would probably do the right side.
