Did some good heat vortex wings tonight….
Made a buffalo sauce with ghee, coconut oil and garlic….
Oven fries, carrots and sunshine sauce…..
Everything came out excellent……….
Wish you were here to try it.

For those that are fans of recipes ect…..the sunshine sauce is pretty darn good.
I will be using a bit of it in tomorrow’s dinner which I am making a chicken tikka type dish….non traditional….with cauliflower rice.
All my meals are very strict and healthy……the past week and the next month moving forward.
Tonight is steak and n brussels with balsamic.

Sunshine sauce is peanut flavour forward…..very easy to make.
.5 cup of coconut milk
.5 cup os sunflower seed butter not sweetened
Juice of 1 lime
1 garlic clove minced
.5 teaspoon red pepper flakes. I used more
.5 teaspoon of cider vinegar or rice vinegar. I used cider

Mix everything together in a bowl…I used a spoon.

It called for an optional ingredient. 1 tablespoon of coconut aminos…..
I think this is a rare ingredient and at specialty shops only….I didn’t have any.
I believe it may be salty so I can’t use soya right now I used a few teaspoons of Bachan’s Japanese bbq sauce.
It does have non GMO soya in it….so I only used a small amount.

After many tastings and minor adjustments I did add juice of another lime.
It’s very a non salty sauce….it’s designed for veggies, works well with chicken.
I dipped my fries last night in it a bit and I was tasty too…..

Reminds me of Thai inspired meals or or meals styled like that.

Easy to make I recommend…..
 
I love wings! And these look delicious!! But, what is “vortex” about? A piece of equipment or a way of grilling?
It’s the truncated cone thing in the center, first picture.
Honestly, I poo pooed the thing for a long time but, then I just bit the bullet and bought a medium for the 22” kettle…total game changer for crispy products and near solar contact for searing! I like it so much I got a small one for my 18” kettle too!

Were the wings cooked plan or seasoned?

I seasoned the wings with Killer Hogs BBQ.
There isn't a lot of flavour addition with the Kilier Hogs BBQ rub.....it does a good job though and it really adds colour a lot especially if you are smoking something with it. Cooking wings on the E6 done the same way has a totally differnt visual outcome.
I posted it a while back....
I was really going for the buffalo sauce flavour on this one...recipe was above, I believe it was equal parts ghee or butter to coconut oil and double the amount of hot sauce so 1/2, 1/2 and 1 cup.....I would have to double check but the recipe would be all over the internet for similar sauce I bet.
I used Frank's as we have used it before and the MRS likes that....I add hotter stuff on top of mine once plate. I enjoy much hotter.
This cook was a once flip at about 20 -25 minutes in.

The fried were the best I had come out of my oven to date....and we made them a lot.
Decided to try just a rub instead of everythign else I usually do and it came out better like I said.
I used Lane's Garlic ( squared I guess ) pic below.......It's a useful rub.....very potent in garlic.
