USDA Prime NY Strips

I was trying to clear some room in my freezer this past weekend, so I thawed out some USDA Prime strip steaks that were just sitting in there taking up space. This cook was done on the old red SS Performer with Rockwood lump as the fuel, using the reverse-sear technique. Thanks for checking out my photos!



The seasoning of choice was Dizzy Pig Raising the Steaks Canadian-style rub. The amount of marbling on these steaks certainly made for some good eating

So, first, you have prime strips "just taking up space"?? ....then, you go and use my favorite steak rub, AND cook them perfectly?!?!? :cool:

I promise prime steaks don't just sit around in my house! Look at the marbling on those steaks... man those looks good
