UPDATE: JBO Bacon Sliced

Couple of days ago I made half a slab of JBO bacon into 2 pieces and smoked on the WSM. Here-http://tvwbb.com/showthread.php?47821-JBO-Bacon-and-some-other-stuff
The first piece I did in Honey and Brown Sugar and the second with Pepper, Garlic.



Cooked over Hickory. Removed when they hit 155*.



Removed them and placed in the freezer to firm up. They shrank about 1" after curing and cooking. But these slices are about 3"s wide! Lots of meat!

Looks great Tim, meat to fat ratio is just crazy!

I know Bob! It's the rib meat making it meaty and thicker! Gave some to my neighbor who helped me get it yesterday, made it this am, told me even the kids loved it and they don't love anything!! So I guess it was a success!
