Been a little under the weather the last couple of weeks so I didn’t get much done in the way of cooks. Buddy has been bugging me however, that d@#n stare always does it, so we tried some nachos.
This is a Weber recipe and is awesome. The marinade for the chicken alone is worth the price of admission. Please give it a try.

Chicken & peppers getting ready.
You can NEVER have too much cheese. This is the second time I’ve made this and each time everyone agrees, these are the best nachos period.
Today was baby backs. Please note the exotic smoke wood, (thank you Mr. Lampe), mixed with the more “pedestrian” hickory.
Ready to go. As usual I hit these with The Slabs Kyle Style rub.
Three hours in. Time for some apple juice…………..
Almost done. The one rack was treated to Saz’s compliments of the gentleman from Wisconsin. Good Stuff!
Done! Nancy made some awesome shrimp scampi to go with this. We served five tonight. An old guy in love with and grateful to his wife, the wonderful wife, youngest son with his honey and oldest son less honey……..again. I think we may have something of a tradition beginning here. I’m not complaining…………
