I occasionally see people referring to pork butts weighing 5-6 pounds, but I have never cooked such a small one myself. Right now, I have two butts rubbed* and wrapped, to be cooked tonight, and together they weigh over 19 lbs. Are these small butts what's left after the store cuts off the best part for "country style ribs", or are some pigs just that much smaller when butchered?
