Turkey Verde and Turkey Tortilla Soup

Used up the last of the Christmas turkey leftovers! Made Turkey Verde burritos and Turkey Tortilla soup with it.

Turkey, a sauteed onion, can of enchilada sauce and some roasted Hatch chilies


Filled a flour tortilla with the turkey, a little cheese and sourcream


The dirty dishwater looking stuff is tortilla soup. Really simple and fast to put together. Chicken broth, hominy, store bought salsa, chopped up turkey and chili seasoning. In a bowl with some baked corn tortillas, cheese and a dollop of sour cream. Not the prettiest soup but its fast a darn tasty.
