I followed Aaron Franklin's recipe in his book. Salt and pepper rub. I used apple and Hickory, cooked at 130°C and wrapped in tin foil, with butter towards the end.
The breast ended up juicy, with a smoky butter aroma. I made great sandwiches. On a side note, far less cleaning to do after this kind of lean meat!
