Three-pound prime grade TT from WFF, dry brined with Kosher salt for 24 hours, then seasoned with Susie Q’s, Cali style with a Classic Santa Maria Set-Up.

On to the pit, over a bed of coals & red oak wood chunks.

Rested for 10 minutes & time to carve up.

Caesar salad with home grown cherry tomatoes, home grown blistered Shishito peppers & TT with spicy chimichurri.

That looks great. Maybe a bit more green on my plate than I'd normally have with Tri Tip, but the salad and peppers look really good too.
