They had trout in today and I couldn't pass up the chance to make some trout tacos for lunch. This is a super simple recipe I modified from one that I saw on TV that Rick Bayless cooked on a beach in Mexico (he used red snapper with a paste of seasoning in lard from a local store)
Here are the trout gutted and de-boned (they came that way).
Made some compound butter with chili powder, cumin and lime zest.
I cut off the heads and tails due to the sensibilities of my co-diners, here they are stuffed with the butter and tied up for grillin. Tortillas lubed up with canola oil.
On the grill, high temp with a piece of pecan.
Tortillas heating up.
Fish are done.
All it needs is a little more lime and your favorite cerveza!
