Yesterday the wife was at the store and saw a tri-tip that had to be bought. Rubbed it down with EVOO then seasoned it up with Tatonka Dust, Pit Barrel All Purpose, garlic salt & ground pepper. Into a bag for overnight stay in the fridge.
This afternoon while the coals were getting started put the hooks into the tri-tip.
Into the pit barrel.
When the tri-tip reached 162, we wrapped it in foil with a sliced onion. And added potatoes and Brussel sprouts wrapped in foil w/ onion and seasoning,
Back into the pit barrel for another 2 hours till the tri-tip reached 192. The tri-tip came out fall apart tender, very flavorful and delicious.
