Tri tip tacos.

Trimmed the fat cap. Seasoned with salt, pepper, chili powder, oregano.

Put it on the kettle. I got a new handle for the lid. I should have bought both.

Cooking on the cool side, with a pecan chunk.

Searing on the sear grate.

Sliced up. Didn't get as even a cook as I wanted but the middle is nice and pink.

Served with hatch chili guacamole, with sour cream, salsa, and on a hatch chili tortilla.

Looks good! I've never thought about using tri tip for tacos...of course, then again, I've only been cooking tri tip since like June. I might just have to try this!
