Throwdown #30: Wrapped in Bacon


 
Here is my entry for Throwdown #30 Wrapped in Bacon.

Meatball Bombs

These guys are made from 2 lbs. of Spicy Italian Sausage and 1 lb. of ground beef. The beef mixture includes one egg, bbq seasoning, and parmesan cheese The smaller beef meatball is wrapped around a 1 inch square of pepper jack cheese. The beef meatball is then wrapped in the Italian Sausage, forming a larger meatball. The sausage mixture includes two eggs and parmesan cheese. I added two jalapenos to the sausage mixture also. Once the meatball is formed, around a 4 oz meatball, it is wrapped in two pieces of peppered bacon and then sauced liberally with bbq sauce, in this case Rufus Teague's Sweet Heat. On grill for about 40 minutes.

Ingredients.



Beef on the left, sausage on the right.



Wrapping the beef around the Pepper Jack Cheese.



Sausage meetball is flattened and then wrapped around the beef.



All but four now wrapped with bacon.



All meatballs ready for some sauce.



All sauced and on the WSM running on 325, little pecan wood for smoke.



After 40 minutes they are done.



Ready for dinner! Paired up with potato salad.



Slice.



Cheese was hot and delicious. Five layers of flavor. Sausage, beef, cheese, sauce and above all, BACON. Thanks for looking.
