The way I do jalapeño poppers

I usually use pulled pork, but I’ve used chicken and beef. I’ll do approx 2 cups of meat, an 8oz cream cheese, and about a cup of shredded cheddar. I like to use smoked cheese. Mix the meat cream cheese and cheddar together, and use a frosting bag or zip lock with corner cut out. I’ll cut stems off the peppers the core them out really good. I’ll then stuff them with the mixture, wrap in bacon, then smoke em real good.3FA05E1F-ADAF-4DD9-A9D3-87AA5A6AFB28.jpeg


I’ve got the same rack, I need to make some soon, wife has some thin bacon she doesn’t like so I can confiscate that.
