The Smok'n Bros 4th smoke - lot of butts

We decided several weeks back that the 29th would be our next smoke and that we would be doing butts. After all, we really bought the WSM to do butts. We decided on 4.

Quick lessons:

Never let anyone sample your product or you will be asked to make them some in the future. So today it is 6 butts. One for my wife's work and one for my brothers work.

I had decided that we would go with some pre-made rub but Dale said his co-worker wanted it with our rub. In the end we did 3 butts with ours and 3 with:

This is a rub from a Memphis in May 2013 grand champion team so I expect it will be decent.

I won't be doing too much of a blow by blow today because we already done that. I will focus on new things and the results.

Got three 2-pack boneless butts from Costco. Trimmed and rubbed them last night. (they were already fairly well trimmed) Got them out of the fridge this morning.

Great to see you back putting some of that delicious smoke on those beautiful butts.

Lesson learned:

Never use any leftover charcoal! Works but makes temp control much more work. Babysitting fire too much.

Plus, just had to add more charcoal.
 
Overall, came out very good but not great. Our very 1st butts were better. ;) We basically had butt perfection the first time so it keeps the bar high. Not sure if it was beginners luck or not. We shall see after we smoke some more butts in the future.

Real fire issues early on. Normally we get it up to temp in about an hour but this time it was closer to 2 hours. Also, we fought with the vents the whole time to maintain temp. Originally, we thought it was because we had 35-37 pounds of cold meat in the smoker. We only let the butts sit out about 20 minutes before putting them on. However, Dale is now convinced is was the reuse of some of the old charcoal from last time. I agree. Fire burned inconsistently throughout the smoke and required a lot more work than it should have. In the future, we would never reuse.

Smoking 6 butts was not an issue but shredding them was tiring. :)

The store rub vs. our rub? Jury is still out. I will have to eat more to make a decision.

Dale to the rescue. I have a set of charcoal companion claws that work great. I can pull a butt in about a minute. How many hot coals do you start with. I start with a full chimney and warm up quick. I Also don't mind adding during. I also like the boneless costco butts. What did you think of them?

We started with 15 coals which worked great last time.

The Costco butts were already well trimmed so I liked that part. The way the bone was removed left them a little more pieced up than the one we got before. Overall, I would get them again.

I need to order some good claws from Amazon. Suggestions?
 
I really enjoy that Sweet Rub O' Mine when I've used it on ribs, Carl. Have used it on butts a couple of times, too, but for some reason didn't like it was much with those. Probably all just a mental thing on my part.

They work well. The good thing about the boneless is more bark.

I used some of those a couple weeks back for the first time and found I liked my Bear Paws better. I think in my mind it's the fact the Bear Paws have more 'teeth' on them, I feel like they shred things up a little more quickly. However, I did like the fact those were made of metal-- I didn't worry about accidentally snapping off a tooth.

Another poster here has touted the Meat Rakes-- I think that might have the best combo of the two-- more teeth like you'd get on Bear Paws, metal construction of your product here.

I tried pulled pork today. It came out quite juicy, but not pulled. Sliced beautifully. Approximately five pounds, for around seven hours, to an internal temp of 177. Should I have gone longer on the cook?
