A little late to the show, but here we go.
Here's my setup with sugar maple for smoke.
(ashes got dumped from the catch pan before the turkey went on)
12.5 pound bird with SYD rub.
Started with feet towards the heat.
Bone-in butt portion of ham on the Performer.
After an hour the leg/thigh end was getting pretty brown, so I spun her around.
Done in a little over 3 hours, hood ran 350.
My plate.
No green bean casserole this year, Jo made delicious sweet and sour green beans.
A very enjoyable day spent with family.
