Ok. This post serves two purposes. First , I need to thank Bob Correll for sending me some Andy's breading mix...hot and spicy mix....(not available in the northeast)... Thank you Bob. Your generosity does you credit

So...the other leg of this thread is me using my WSM as a jumbo joe to cook these chicken wings......first real trial of the aluminum tabs that I installed to keep the lid from slopping around...worked pretty good.

A small chimney of used charcoal and a full weber chimney of new and the jumbo joe clone is cooking away at 350 degrees without breaking a sweat....

I had had some wings dredged in the Andy's breading mix and a few in regular shake n bake for sweetie. (She is not a fan of the hot n spicy)but I am...
The WSM functioned pretty well as a jumbo joe. Cooked at 350 the whole way and did the wings and taters up nicely...

These came out really nice. The Andy's breading is spicy , but not really hot. I'm going to try it again on chicken fingers to see if it's really spicy or not....I might've been half in the bag when I finally got these cooked , so I might've not judged correctly.

Anyway , thank you bob Correll ...the breading mix was good.....I think!

thanks bob. I haven't forgotten you either. I bought a little local BBQ goodness for you , but I just haven't been able to get it packed and shipped. Sorry for the delay.
 
....and one little thing about grilling on the WSM/jumbo (hereafter referred to as the Wumbo;)). When I first threw in the lit charcoal and put the lid on , I thought the therm in the lid was broken , but it was actually pegged at way above 350...
after a bit I got out my backup therm and popped it thru the top vent....seemed like I was Cooking at around 375...the wings were done in about 20 minutes and those skillet taters crisped up beautifully in that same time. (The spuds were half nuked beforehand and then cut into wedges).
