After seeing Bob’s wonderful offering of Basket Case Spiedini, I decided to give it a try but took a few liberties. Since I don’t have a basket, we opted for the kabob option. The breasts were cut and marinated in herbs/white wine then hit with the Panko & Parmesan. Panko is fragile so you need to be able to find a way to turn your cook without touching it.
The Yukons were sliced, pre-boiled and brushed with EVOL then dusted with salt, pepper and Rosemary from the garden. I made a Mayo sauce to go with these with Parsley, Chives, Dijon Mustard and Gaaaaalic.
Ready to go........
We had this with fresh baked gaaaalic bread, stuffing and an optional hot sauce. Everyone seemed to like it. Thank You Bob!!!!!!!
