Texas Pulled Pork

In Texas pulled pork is not at the top of the list for most but I spent a lot of time in Mississippi and learned to appreciate a good butt.

I injected and rubbed the night before.
I injected the butt with Stubs Chipotle Butter. The bottle came with a nice injector. I thought the injector would be a low dollar use once deal but it was actually pretty nice. I washed and kept it.
The rub is a pork rub my father in law makes.

I fired up the smoker at 5am and the butt was on at 6:15am. It smoked for 12 hours. I pulled at 200 degrees internally. I wrapped with foil the last hour to speed it up. I rested for 30 minutes and pulled.



A little injection squirted out.


I love a good bark




 
Nice Bark. Nice moist white meat. Definite Smoke Ring. Good lookin cookin.

BTW... My brother lives in Allen and mom in Garland. I grew up in Garland.
