Like many of the other members of this forum I grabbed a Jumbo Joe on clearance at Target and decided to test it out this weekend with some low and slow. I had a 3 lb chuck roast in the freezer, picked up some peppers and onions from the local farm stand and about 6 hours later we were eating PSB.
Smoked the beef for about 4 hours on the JJ and finished in the oven. I was pretty impressed with the JJ and how efficient it was with the charcoal. Filled the charcoal basket to almost full and placed ~10 lit briqs on top with 2 chunks of hickory. Didnt need to add any extra fuel during the cook.
Beef on top of the veggies and ready for the oven. Never got a plated pic. It was gone before I could snap one.
On Sunday I picked up some spare ribs and put those on the WSM.
This time I got a plated pick. Ribs were served up with a baked sweet potato and some smoked corn.
