Tardy Post from St Psddys Day

Hi all,

Yes I and quite late in posting photos from St Paddy's day. I tried the quick pastrami from preseason corned beef. Bought the corned beef at Costco and also some bb ribs just in case my experiment did not work.

I followed the directions from the VWBB site to make pastrami from corned beef. I soaked the meat over night to leach out some salt.





It turned out great. I used ny 18.5" smoker and it was 6 hours to get to 165'F and I wrapped them to rest. Never got to 195'F. Only got to172'F














Tasted great - ribs too? Guinness too!

That's some really good grub all around. Can I ask what the purpose of the backpack is in your 'self portrait'?

I have a heart problem. At the time of the cook heart had been removed and I was transplanted a total artificial heart. The backpack is a pneumatic air pump for the artificial heart

NEWS UPDATE: New heart transplant on 4/10/15 - everything went great. No BBQ for awhile but I am sure it will be good when I can.

Is there such a thing as heart healthy pre diabetic BBQ? ideas?
