Wanted to make Carne Asada tacos like so many great posts I have seen. The first problem I encountered is that I could not find skirt or flank steak in this town. Ended up buying a cut called flap steak. And next I searched high and low for Chef Merito seasoning and it is just not available here. All I could find was Paul Prudhomme's fajita seasoning. But hey, can't let a couple of setbacks get you down...
So here we go.
Marinating the meat in the juice of limes, oranges, a little water and beer and some garlic, cilantro and onion. Got this recipe from several posts I researched.
Making some salsa verde that I learned through Tony R's posts. The tomatillos were really small but that's all they had.
Kim made guacamole and pico for the meal.
Next made Tony R's fantastic refried bean recipe.
Grilled the meat which had been marinating for several hours.
Heated up some corn tortillas.
And plated dinner.
Everything turned out great. The meat was so tender and full of good flavor. Thanks for looking and have a great week!
