I picked up a 12 pound pork loin from Costco this past Saturday. I cut it into 3 equal pieces of
approximately 4 pounds each. This one was seasoned with Simply Marvelous Sweet and Spicy Rub.
I then wrapped it with a few pieces of pepper bacon and gave them a shot of the rub.

Roast was put onto the Performer, using RO lump charcoal and 1 chunk of hickory and 1 chunk
of cherry wood.

Sauced the loin with a 50/50 mixture of Blues Hog Original and Blues Hog Tennessee Red when
the internal temp hit 140.

Loin pulled at internal temp of 145. Will tent under foil under the sides are completed.

Sliced

Plated with Cheesy mashed potatoes and corn.

Delicious Wednesday night dinner. Roast was very tender, juicy and had a great sweet and
spicy flavor from not only the rub, but the mixtures of Blues Hog.

Thanks for looking!
