SW Chicken Sausages

We made up some South Western style chicken sausages this weekend, along with some Hot Italians:

Ground up about 15 lbs of boneless thighs

Prep some ingredients: Cilantro, roasted some Anaheim's, chopped jalapeno , lots of garlic, tequila, beer, cumin salt, etc....

Wow is right! Where to start? That is some piece of machinery. And no cheap tequila for those amazing links. That's why you have a gasser in your coral, for those times all that up front effort wears you out.;)
 
All that time spent packing the sausages your chimney of charcoal could have been roaring to go. That is an impressive set up. Definitely does not look like the cheap grinders bought at bass pro.
