I figured out what I did wrong (besides wrapping them in foil) I forgot to sprinkle the rub on them when I put them on the grill. They were still good, but I really heard about it from my bride, who made the rub for them *yikes*
 
Those look delicious Chuck - I'll have to try that!
I'm pretty sold on cooking them in this method (until I get a Santa Maria) just don't forget the rub, doh!

Hi Teddy, I'm a big fan of Stubbs BBQ sauce. I used "Spicy" for this batch, but I think I'll go back to "Sweet Heat" as the Frank's Red Hot Buffalo gets them pretty spicy :)
 
At the beginning flames and lid off scared me, but final product is great! Complimenti.
A little wood goes a long way, too much wood and you will have flames all up in your "flappers" (Thanks Jim, I love callin' them flappers)
