Grilling like that on a WSM is a lot of fun. We did some tri tips like that this weekend. Seared them with the grate on top of the charcoal ring, then put the whole thing back together and finished on the top grate just under the dome. This sort of mimics the "Santa Maria" style of cooking. You just don't get this kind of versatility with other smokers.
