Howdy folks...been craving a corned beef for a bit so I thought we'd do a Pre-Pattys Day CB Brisket!
First off I'll share my new score with ya all...spotted this Beauty on CL a few days ago..called and never heard back...well they called this morning..was a freebie!
Needs a clean up and put the legs on right..other than a few dings around the lip of the lid, really it's pretty clean!
Ok so cooking..4 lb CB...soaked it in a tub I water for about 2 hours. Then tossed on the performer at about 350 for 1.5 hours with a bit of hickory!
After 1.5 things started to get done!
So I put it in a pan with some beer and covered it up for about 45 more minutes!
Added some reds to the party!
Whipped up some Irish soda bread!
Sliced up!
All plated with a simple salad..taters, bread and horseradish!
Think Gerti and I are going to chill on the couch!!
