Sunday blahs? How about some chicken enchiladas!

We really needed something fun to do today so we decided on enchiladas. We both love them so much. Dusted some chicken breasts with seasoning.

Kim went to work in earnest on her heavenly guacamole, from Rick Bayless recipe.

I grilled the chicken and let rest when done.

Tony R's refried bean and rice recipe has become a standard in our house. Thanks Tony! Sorry for the pic quality. As soon as the sun goes down I turn my halogens on and it makes for bad pics.

Here's a shot of assembling the goodness.

Once everything put together cooked them 10 Minutes covered in foil on the grill and 10 with the foil off. This is with the foil off.
