Yesterday's Sunday dinner.
Meat: 2.5lb 28-day aged Black Angus Beef Fillet. (Tenderloin).
Prep: Dijon/Horseradish smear, with Weber steak seasoning.
Cook Method: Minion.
Smoke: Mesquite.
Temp: +/- 240*.
Time: 2:30 mins. Sear: 3 mins either side. 30 min rest.

Outstanding plate! I've noticed that mesquite really gives a great smoke ring. I've been using it more lately, and I've been loving it more and more.
