Sunday’s Triple Cook

We received a call from our oldest son, Michael, who lives in Virginia yesterday. He wanted to let
us know that he was off work during the 4th of July and the next few days afterwards. He invited
us to visit, but also wanted us to bring some of my vacuumed packed BBQ. This was a slight problem
since my wife visited the other son in Florida a couple weeks ago and cleaned out most of my vacuum
packed stash. Michael only had a few requests which were Babyback ribs and smoked chicken.
His apartment does not allow grills, so will do them here. I will also be taking him some of my vacuum
packed peach pork butt.

Babybacks were trimmed and seasoned with Three Little Pigs rub.


My wife wanted meatloaf for tonight’s dinner, so she mixed up some burger with lots of veggies
so I could cook it on the grill. Not sure of what all she put in there, but it cleaned out our veggie drawer.


Babybacks were put on the WSM with some pecan and cherry wood.


Meatloaf was put on a soaked red oak plank and put in the Performer at 350 degrees. We decided
to get as much done this morning, since it was supposed to storm real hard this afternoon.


Meatloaf is done!


Chicken was marinated for about an hour with Veri Veri Teriyaki and a seasoned with Penzeys Florida Pepper.


Chicken onto the Performer, with one chunk of cherry wood and skin down to start.


Chicken is done!


Babybacks are done!


Meatloaf was plated with Tony Chachere’s Creole Dirty Rice and steamed broccoli.


All in all a great Sunday to be BBQing and grilling in the South! Delicious meatloaf and sides and
yep had to sample the ribs!

Very nice meatloaf. Michael is sure to be a very happy son with that chicken and rib goodness coming.
