Stuffed Tomatoes and Peppers

As I recently mentioned, I have taken a new job in Portland, Oregon. Well, once we sold our house in Boise, Idaho and got the whole family moved up here, I was itching to smoke SOMETHING on the Weber! So, after looking at what we had on hand, I decided to cook up some stuffed tomatoes and peppers.

We had purchased some very sweet elongated red bells from the Lents Farmer’s Market that day, and I really wanted to do something with them for dinner. My wife is not a fan of any kind of pepper (yeah, I know; she doesn’t know what she’s missing), but loves tomatoes. So, I picked up some firm supermarket tomatoes – the ones with almost no taste – that would work.

I started by browning some ground beef in a skillet with onions, garlic, and a myriad of seasonings. I then shaved a bit of the tomatoes off the bottom so they would not tip over while cooking, and also cut off the tops and scooped out the insides, leaving the walls intact. I also split the peppers in half and cleaned them out, as well. I allowed the beef mixture to cool a bit before stuffing it into the veggies.

Plated with a salad and a 2012 Alaskan Brewing Baltic Porter Ale that I brought with me to Oregon that paired VERY well with the meal:



This meal was a hit with the family, and we’ll definitely be doing this one again soon!

Fabulous cookin Barret...congrats on the new house/job...peppers look outstanding!! What did ya think of that Baltic porter? I have had a few of those...I could see how that would go perfect with your meal!!

Stuffed 'maters and bells of any color are up there on my favorite list, yours look excellent and have me craving some, this is going into the rotation this week.

Alaskan's Baltic Porter is one of my absolute favorites; I put it up there with Deschutes' Abyss, Uinta's Labyrinth, Big Sky's Ivan the Terrible, and Goose Island's Bourbon County Stout. They all go well with this type of food, but they of course go very well with red meat, sausage, and other tomato-based hearty foods.

Alaskan is one of my favorite breweries, and I'm glad I live in the Pacific Northwest so I can try them all. Of course, you live RIGHT THERE, so you can try the ones they serve only at the brewery. One day, I will take a trip up north to do just that.
 
Barret....welcome to Oregon neighbor. I recognize a good man that can appreciate a good grill, good food and good beer. Great cook....nicely done sir!

Good to hear!! One of my favorites as well.. The brewery is about 2 miles from my house...they got some new stuff coming up so keep your eyes open! Des chutes is another of my favorites right now..got the Jubelale open right now!
 
I like what I see, Barret! Those stuffed peppers/tomatoes look like a complete meal in themselves...beef, rice, vegetables...all in one convenient edible bowl.
