Stuffed strip loins.

You may have noticed I like stuffing different meats. I tried this, asked my butcher to cut some strip loins 1 1/2 to 1 3/4" thick. I sliced a pocket down the middle, rubbed them with my dry rib rub and then stuffed them with crumbled Gorgonzola cheese fresh Italian parsley and sauteed mushrooms salt and pepper. Let them rest overnight. Different but very good !
