I've done sharp, but both would be good. My wife's pie is insane.First I ever heard of it was in a Archie comic late 60's.
I never tried it, sharp or mild cheddar?

My wife's apple pie is REALLY good as well except for one thing. I wish she could do differently. She has to use butter in the crust instead of lard. It is good but oh boy I'd love if she could use lardI've done sharp, but both would be good. My wife's pie is insane.
Miriam was a purist when it came to pastry. After many years, I finally got her to use half butter and half lard in pie crusts. My wife's apple pie is REALLY good as well except for one thing. I figured as much. The issue for her is a pork allergy. Not the taste. When we first got together she would eat pork (occasional chops and bacon) but every time she would become sick. She didn't put 2 + 2 until one day mentioning it to the doc. They ran an allergy test and found there is a compound in pork and oddly enough the same compound in salmonoid fish that she's quite allergic to. Helluva curse
