Spring Break Al Pastor

One of the many blessings related to working for the California public school system is ... SPRING BREAK!

On my first day off, I have decided to tackle America Test Kitchen's version of tacos al pastor.

I have the ingredients ready for the marinade, stay tuned!

My favorite tacos al pastor are from Tijuana, Mexico - at a taco spot near downtown Tijuana called "Tacos El Gordo".

I am letting the pork butt (sliced up) get to room temperature, while the marinade ingredients soften under a low flame.

While the meat was braising, I checked in on my jalapeño and San <arzano tomato plants.

When the pork was done braising, I pulled it off the fire and sliced up some pineapple rings.

Here is the meat and pineapple after the first flip...

After I grilled the pork and pineapple, I chopped up the pork and tossed it with the marinade. Here is a plate (got to work on my plating and plating photography).

Final thoughts ... Not as good as a taco stand or truck, but America's Test Kitchen rarely disappoints. It was different, but tasty.
