Spooky Flat Iron Steaks (ok, not really)

Grilled a couple of flat iron steaks for Halloween dinner. These steaks were of very good quality with a decent amount of marbling - got them on sale at Whole Foods for $6.99/lb. The seasoning was quite simple: a "dry brine" of salt for 24hrs followed by fresh ground pepper before going on the grill. No complaints about how these came out.


Cooked on the Performer using Wegmans lump charcoal (produced by Royal Oak, I believe) employing the usual reverse sear technique.

Jerome, id say your better at cutting steak than carving a pumpkin;).
The steak and side dishes are to cooked to perfection.

Looks like a lotta grub there... feed a large number of folks or plenty of leftovers?

Did you measure an internal temp?
@Van DeWald: That I did! It was about 135°F in the thickest part of the steak while resting after being taken off the grill.

@Jim Lampe: Thanks Jim! The answer would be C) none of the above. Two flat irons, asparagus, and potatoes were just enough food to feed me, my wife, and my dad.

That's a great Pumpkin! It has character. So does that delicious looking meal. Those steaks are killer and the entire meal looks delicious. Photography is outstanding.
