Spicy apricot wings for weekday lunches. Dusted wings with garlic, onion, white pepper, black pepper, celery seed and paprika. Put those on the baby Weber.
Made up my glaze been using this for many years .good mix of heat and sweet with a bit of twang. Mix all this up in a sauce pot. I like to use a immersion blender. Bring to a light boil and let simmer for 3-4 minutes. Allow to cool at room temp.
I put it on the last 15-20 minutes of the cook. I’ll baste a couple times to get a good coating.
1/2 cup (160g) apricot jam or preserves
2 tablespoons (40g) corn syrup
2 tablespoons (30ml) water
5 teaspoons (25ml) distilled white vinegar
1 1/2 teaspoons (4g) cornstarch
1/2 teaspoon (3ml) soy sauce
1/2 teaspoon (3g) yellow mustard
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
1/8 teaspoon finely ground white pepper
