Spatchcocked Cornish on the WSM

So took three nice Cornish Hens, brined all day in salt, sugar and Juniper Berries.

Tonight I spatchcocked them, and seasoned three ways. 1. Kosher and Fresh Ground with Penzey's Spanish Style Smoked Paprika
2. Mrs. Dash salt free Lemon Pepper 3. Herbs De Provence
On the WSM with the water pan removed, lump charcoal and 3/4 a chimney of Stubbs to get it going.Apple wood for smoke. Dressed them with EVOO first.
Got up to 375 and held it there

Nicely done Bill! How is it marinated with the juniper berries? I always think of Gin when I smell juniper berries...

And I love that beer too. I get it all the time here in Canada. I will second that you all should try it, if you can find it.
 
Great looking hens Bill!! Never tried cooking them this way, but as soon as I get back to the grill, that will change.
 
I LOVE Cornish Game Hens on the WSM. I'll bet yours were as good as they look (and they look FABULOUS)!
