Bought what I thought would be a decent chicken - Organic from the Duchy of Cornwall - otherwise known as HRH Prince Charles estate and sold in Waitrose (that will mean something to the U.K. members)
Looked good on the grill, spatchcocked, a little rub and lemon juice and a light hickory smoke.
I make no apologies for stealing the idea of twice cooked potatoes from a recent post on here. Mixed the flesh with butter, cheddar cheese and a splash of Stubbs sauce. Add some homemade slaw (red wine vinegar, olive oil, red cabbage, white cabbage, homegrown onions, carrot, red and yellow bell peppers) and some salad.
I regret to inform his Royal Highness that his chicken was very disappointing, way below expectations and very stringy and chewy. It seemed to be cooked OK. So much for organic chooks!
The potatoes and coleslaw were excellent.
