Spatchcock chewy chicken

Bought what I thought would be a decent chicken - Organic from the Duchy of Cornwall - otherwise known as HRH Prince Charles estate and sold in Waitrose (that will mean something to the U.K. members)

Looked good on the grill, spatchcocked, a little rub and lemon juice and a light hickory smoke.

I make no apologies for stealing the idea of twice cooked potatoes from a recent post on here. Mixed the flesh with butter, cheddar cheese and a splash of Stubbs sauce. Add some homemade slaw (red wine vinegar, olive oil, red cabbage, white cabbage, homegrown onions, carrot, red and yellow bell peppers) and some salad.

I regret to inform his Royal Highness that his chicken was very disappointing, way below expectations and very stringy and chewy. It seemed to be cooked OK. So much for organic chooks!

The potatoes and coleslaw were excellent.

It looks great, but what a bummer. I have the same thing happen to me, some birds are just rough, chewy, etc. Potatoes looks very tasty!!!

It looks like His Royal Highness has sold you an old "spent" hen. Only good for stews & soups. I'd write to Buckingham Palace, & ask for your money back!
It does look good though.

I had much the same thing happen with a free-range turkey for our Thanksgiving dinner.
Now we just stick to "normal" birds. Agreed that it looks great!

That plate looks awesome Gary, sorry about the chicken but that does happen. I'm sure there are a lot of us who have been there before. I always say the next one will always be better.

That's a bummer, you would think that would be a great bird seeing where it came from. Oh well, some times you're the windshield and sometimes you're the bug. Plated looks great though.

It looks fantastic! I have had similar results with organic, free range, gluten free (yes labeled gluten free) birds here too. Personally I haven't bought any of them. Its usually been a friend that is visiting or a guest of some sorts that feels the need to bring me something to cook for dinner.

Gary - the chickenh was clearly cooked expertly - it has to be the quality of the bird. I think HRH owes you a bird! Anyway that plate is beautiful...
