This past Saturday, I rubbed up some ribs, spares and baby backs.
On the WSM with apple and cherry wood for smoke.
After 30 minutes, I checked to see how the temps were doin'... instead of my usual 235 - 250ºF reading,
the thermometer was pegged past the 350ºF reading...
I pulled the entire cooking grate off the WSM and placed it inside the 26"OTG kettle then shut down the WSM.
About 35 minutes later, the temp dropped to 250ºF. I put the ribs back on and watched it carefully.
The day before, I used a pressure washer to completely clean the interior of my smoker... never again will i do that.
Anyway, while the ribs were cooking, I made another batch of Sun Pickles
The temps settled to a nice 240ºF. and the ribs were on their way.
Corn and small Yukons were added.
About an hour later, the ribs appeared to be done...
after another 20 minutes or so, I sliced the ribs...
Then served dinner.
Very Yummy!
