Spares & Backs

This past Saturday, I rubbed up some ribs, spares and baby backs.

On the WSM with apple and cherry wood for smoke.

After 30 minutes, I checked to see how the temps were doin'... instead of my usual 235 - 250ºF reading,
the thermometer was pegged past the 350ºF reading...
I pulled the entire cooking grate off the WSM and placed it inside the 26"OTG kettle then shut down the WSM.
About 35 minutes later, the temp dropped to 250ºF. I put the ribs back on and watched it carefully.
The day before, I used a pressure washer to completely clean the interior of my smoker... never again will i do that.
Anyway, while the ribs were cooking, I made another batch of Sun Pickles

The temps settled to a nice 240ºF. and the ribs were on their way.

Corn and small Yukons were added.

About an hour later, the ribs appeared to be done...
after another 20 minutes or so, I sliced the ribs...

Then served dinner.

Great looking meal Jim! I wish I had the knack for smoking ribs...

That was either one small rack of back ribs or that was one big rack of spares!!! How much sooner did the back ribs get done b4 the spares??

On the pickles, i add jalapeno peppers, onions, you can add carrots... basically, anything you want.
also, red pepper flakes heat up the entire jar :mad: :p

Scott, the ribs pretty much were done 'bout the same time, I held them in a foiled pan before slicing...
 
Ribs, corn and taters all look great, Jim!

I'm doing some baby backs later this afternoon.

My wife used to make sun pickles. Gonna have to get her to do it again soon.
 
Good looking Ribs and sides Jim! Nothing like working thru little issues like temp control! Glad you made it work out!
 
Jim, Great looking Ribs and sides. I just power washed my 22 1/2 yesterday. Other than an a occasional splash back it did a good job of cleaning up. What happened to you?
