Ok so yesterday i felt like i had to try out something new.

Decided on spares as protein and tryed 3 different flavours.

Asian,Herb & A dry rub.

Asian marinade:
soysace,ricevinegar,plum juice,roasted red chilis,sake,salt & sichuanpepper.

Herb paste:
Garlic,oregano,onion,thyme,basil,evoo,salt & black pepper

Rub:
Brown suggar,paprika,thyme,oregano,onion,garlic,chili,kumin,salt & black pepper

Smoke wood:Apple

Temp: 220-275 about 5h (the temp was not steady at all last time i mix lump and briquettes)

Sides:corn and coleslaw

Ok so how was it?

Asian 5/10
Herb 8/10 <---Winner
Rub 7/10

The paste was really good on the ribs with a good garlic taste,will work more on this and try to make it even better.

It could have been that i havent tasted ribs like this before and thats why it got better points.

Interesting. If you think about it, you're classic rub has all the stuff your herb rub has, with the exception of the basil, so I'm not too surprised you liked it best.

They all looked good!
 
Great looking smoke ring! Would have loved to see pic of your 2 year old going to town on a rib. Nothing like a boy's smiling face full of rib and sauce running down cheeks and chin!

You will see me using that paste on ribs in the future.

Think the paste gave a deeper flavour then the ordinary rub.
But the rib got 2hours in the fridge with the paste on before grilling.

Think it will be good on chops too,i have to try that
