Some sort of ribs

They're called pork back ribs or something like that? Never seen them before, my son brought them home last night and two packs of beef short ribs. I've got the short ribs in the rub but I did these high heat for two hours. I'll post up a sliced picture later, they were tender and 190 degrees. My son is due home any minute now, so I pushed these through pretty quick

Two hours at 300ish

My son came home and these (whatever they are) get the seal of approval, very tasty very tender

Next up.....Beef Short Ribs
 
I think those are Loin Backs - -- they look great :)
That's what they are, Loin Backs. They really came out good for a high heat cook. I'd love to give them a shot at a low temp cook, bet they would be insanely good
 
I want to cook them again - it's been a while. The Costco's around here - that's what they sell. I'm not overly familiar with the different rib cuts, but I was wondering last time I did them if the thicker piece is pork belly (probably not) :)
 
Those ribs looks delicious Chuck. Great cook. I've cooked a ton of loin back ribs but they were never that large and meaty. Great cook!

You nailed it. He's doing really well there to, he's out of the retail union and in the butcher's union. Now I've got my age old argument with him again. He's making pretty good money and now college isn't as important. So now I'm back beating on him to get his BS. This being a dad can really wear you out :)

I have a freshman in college who is living at home. It's hard for them to learn about rent and car insurance and other bills while they're still under the umbrella.
 
Outstanding cook those ribs look mighty tasty. It's nice having someone looking out for you in the meat department,:)
