Yes Sir. KitchenAid. She ain't the best but gets the job done.

Despite the cold, wet, windy day, when you are a weekend warrior, you don't have the luxury of picking the best days - you gotta do it on your days off. Today was sausage drying/smoking day.

used some leftover Royal Oak and a chunk of Pecan from a buddies tree

sticks are done - I put them in ice water but still got some wrinkling

Dwain those brats look delicious. A question to understand better. You say you put in ice water! For which reason?

A cold water bath serves 2 purposes. It stops the cooking and helps keep the casing from wrinkling.

I also wipe mine down after cooling to get the oils and smoke residue off the casings.
